RECIPE 👇 Salt and pepper calamari Ingredients: 1.5 lbs calamari 1 cup buttermilk 1.5 cus rice flour 2 tsp salt 1 tsp black pepper 5 jalapeños, sliced 5 garlic cloves, minced Green onion bunch, sliced thinly (optional) Oil for frying 1 tsp salt or to taste 1 tsp black pepper or to taste 1/2 tsp sugar or to taste Directions: Cut the calamari into rings and rinse thoroughly with cold water. Place into a bowl and cover with buttermilk. Cover and refrigerate for at least 30 minutes. The longer the better. Into a large bowl, combine the rice flour, salt and pepper. You can also add garlic powder or whatever seasoning you like. Toss the calamari with the flour. Shake off excess flour. Add enough oil to cover the bottom of a skillet and heat on medium-high to about 375F. Fry the calamari in bathes for about 2-3 minutes or until golden brown. Remove from the skillet and discard all but about 2 tablespoons of oil in the skillet. Add the jalapeños and cook for a few minutes, then add the garlic and green onion and cook for another minute. Return the calamari back into the skillet along with the salt, pepper and sugar. Toss and adjust seasoning to your liking. Enjoy ❤️

Here’s #WhatMyKidsEatinaDay Breakfast: croissant french toasts flatten the croissants using a rolling pin until they are even, set aside. Into a deep dish whisk together 2 eggs and about 1/4 cup milk, vanilla extract and cinnamon. Dip each croissants into the milk mixture and set aside. Melt 1 tablespoon butter in a skillet on low medium heat. Cook the croissants for about 2-3 minutes on each side or until crust has developed. Serve with whipped cream, berries, powdered sugar and maple syrup. Turkey bacon on the side. Lunch: Pasta Primavera 3 cups veggies of choice cut into similar size 8 oz small pasta Olive oil 2 leeks, sliced (white part only) 4 garlic cloves, minced Salt, pepper Red chili flakes Italian seasoning 1/2 cup heavy cream 1/2 cup grated Parmesan 2 tablespoons butter Cook pasta al dente per directions, reserve about 1 cup pasta water. Into a skillet add about 1 tablespoon olive oil and sautee the leeks until softened, about 5 minutes. Add the minced garlic and vegetables. Cook for about 4-5 minutes depending on the vegetables you are using. Add the pasta water, salt and pepper to taste, red chili flakes and Italian seasoning. Let it come to a boil. Add the pasta, heavy cream, parmesan and butter. Toss until the butter has melted. Serve with more parmesan on top. Smoothies: into a blender add 1 cup milk of choice, 1 cup frozen cauliflower florets, 1/2 frozen banana, 1 cup frozen blueberries and 1/2 cup pineapple. Blend until smooth. Dinner: BEEF ENCHILADAS Ingredients 1 Tbsp oil 2 lbs. ground beef 1 onion, diced 6 garlic cloves, minced 2 tsp tomato bouillon 1 tsp beef bouillon 19 oz red enchilada sauce, warmed 2 cups shredded cheese or more 10-12 flour or corn tortillas Seasoning: 1 Tbsp salt 1 tsp black pepper 1 tsp garlic powder 1 tsp onion powder 1 tsp smoked paprika 1 tsp chili powder 1 tsp cumin 1 tsp dried oregano Place ingredients into a bowl and mix. Directions: 1. Into a skillet on medium high heat add the oil. Brown the ground beef and break it apart as it cooks. Once beef is no longer pink, add the onion and garlic. Cook for 4 minutes. Add half the seasoning, tomato bouillon and beef bouillon, stir to combine. Cook for a few minutes. 2. Turn the heat off and add 1 cup enchilada sauce, 1 cup cheese and stir to combine. 3. Preheat oven to 375F. Pour ½ cup of the enchilada sauce to the bottom of a baking dish. Warm the tortillas and add about 2 tablespoons of the beef mixture and some cheese. Roll the tortillas and place seam side down into the baking dish, repeat with the rest of the tortillas. 4. Top with some of the beef mixture, the rest of the enchilada sauce and cheese. Bake in the oven for about 15 minutes or until the cheese has melted. Once done, let cool for a few minutes and add desired toppings. Dessert: strawberry and lemon gelato

Here’s #WhatMyKidsEatinaDay – meatless day Breakfast: yogurt bowl with berries and granola Smoothies: into a blender add 1 cup coconut water and a handful of kale. Blend until smooth. Add 1 cup frozen pineapple, 1 frozen banana and 1/2 cup frozen mango. Blend again until smooth. Lunch: refried black beans and cheese tostadas Into a skillet add 2 tablespoons of oil, some sliced onion and a whole jalapeño. Add 3 cans of black beans (drained and rinsed). Season with salt, pepper, chicken bouillon, smoked paprika, garlic powder, onion powder and cumin to taste. Add about 1 cup of water. Toss to combine and begin to mash beans until it reaches your desired consistency. Add more water if necessary. In the meantime, preheat oven to 400F. To a baking sheet and 2 tablespoons of oil and dip some corn tortillas flipping to ensure both sides are coated with the oil. Bake for 5 minutes, flip the bake for another 5 minutes. Spread some refried beans on top of the tortillas with some cheese. Bake until the cheese has melted, top with your favorite toppings and drizzle with taco sauce or enchilada sauce Snack: peanut butter jelly and banana rice cakes Dinner: golden fried rice Into a large bowl add 3 cups of cold day-old rice. Separate 4 eggs and add the egg yolks only to the rice. Place egg whites into a bowl and whisk. Toss and make sure rice is fully coated with the yolks, it should turn yellow. Into a hot wok add a tablet of oil and scramble the egg whites. Remove from the skillet and add another tablespoon of oil. Add some diced onion, edamame and frozen veggies, cook until the veggies have softened. Add minced garlic, rice and egg whites back into the wok. Season with salt, msg (optional), white pepper and about 2 teaspoons of Chinese cooking wine. Toss on high heat until combined. Remove from heat and drizzle some sesame oil and sliced green beans. Toss again and serve. Dessert: chocolate chip cookies and milk
