The one question I get the most since going vegan is whether I don’t like or miss meat, cheese and eggs… and the answer always comes down to this. I love meat. I love cheese. I love eggs. I could eat them every single day of the week. But I can no longer ignore that by eating them I would rule a sensory pleasure over the value of a life. The fact is that whether it’s a steak, a piece of cheese or any animal-based product, it involves killing. Meat is obvious, with cheese it’s the male calves, with tiny fish ‘too small to feel’ it’s the way we fish for them that has catastrophic effects on wildlife.
I’ve only found it acceptable until recently, because I was so removed from that crucial part of the process. I asked myself whether I would be able to continuously take these lives for every time I’d eat a piece of meat, fish, dairy, egg… and the answer was a simple no.
Is it easy? Of course not. Do I miss the flavours I used to love? Of course yes. But I firmly believe that we can only drive exciting & flavoursome solutions once we commit. So here’s to a future filled with natural & seasonal plant-based recipes, exploring cultures that traditionally include more vegan dishes and finding ways to localise them. 🌱 ”
